Graduation day!!!!

Well today marks the last cooking class for the year. It has been such a joy for me to have had the opportunity to teach all of you this year! I'm amazed at how proficient and accomplished you have all become in the kitchen. I'm so proud of each and every one of you.

We had soooo much fun breaking up the chocolate...with a little help from a hammer lol!












When all the hard work was done we made our delicious fondue...


and then shared one last meal together :-)

Quesadillas


        
1                 handful grated cheese 
2                 soft tortillas

Filling Options:
Red pepper, green pepper, corn, black beans, jalapeño,onion, cooked chicken or ground beef seasoned with cumin, mushrooms, fresh cilantro (all diced)           


Place one tortilla shell on a lightly oiled pan. Then sprinkle with enough cheese to lightly cover the tortilla. Now add your choice of fillings. Sprinkle with a bit more cheese and place the second tortilla on top of your fillings.

Turn your pan on to medium heat and cook until the bottom tortilla is golden brown and your cheese has started to melt.

Carefully flip your tortilla over like a pancake…being careful not to have any of your filling fall out.

Once both sides of your quesadilla are golden brown and the cheese is all melted and gooey you can remove it from the pan and place it on a cooling rack.

When it’s cool enough to handle cut into wedges.

Serve with sour cream, guacamole or salsa.

Banana Bread



Use your "A Million Muffins" recipe to make yummy banana bread! All you do is:
 -Use an extra 1/2c of flour as your healthy dry stuff
-3 bananas mushed up as your wet gooey stuff
Everything else is the same!


Mush your bananas up in a plastic bag


My favourite combinations of yummy bits are:

Coconut & Cranberry
Dried Apricot Bits & Slivered Almonds
Chocolate Chip & Pecan
Dried Cherry & Chocolate Chip

The combinations are ENDLESS!!!!!! 



Make sure you get as much goo out of the bag as possible


Remember only to stir just enough to moisten all the dry stuff DO NOT over mix!!

The Perfect Omelette Every Time



2                 eggs
2tbsp          milk
1 or 2tbsp   butter
Salt and pepper to taste

Crack the eggs into a mixing bowl and beat them until they turn a pale yellow color.

Add the milk to the eggs and season to taste with salt and pepper. Now, grab your whisk and whisk like crazy. You are trying to beat as much air as possible into the eggs.

Heat a nonstick sauté pan over medium-low heat. Add the butter and let it melt.

When the butter in the pan is hot enough to make a drop of water hiss, pour in the eggs. Don't stir! Let the eggs cook for up to a minute or until the bottom starts to set.

With a heat-resistant rubber spatula, gently push one edge of the egg into the center of the pan, while tilting the pan to allow the still liquid egg to flow in underneath. Repeat with the other edges, until there's no liquid left.

Your eggs should now look like a bright yellow pancake.


If you're adding any other ingredients, now's the time to do it. Sprinkle your fillings on half of the omelet.

With your spatula, lift one edge of the egg and fold it across and over, so that the edges line up. Cook for another minute or so, but don't overcook or allow the egg to turn brown.
